Red, White, and Blue Salad

The perfect summer salad elevated to fresh new heights. Delicious for that Independence Day BBQ, or a cool weekend dinner meal on a hot night. Snip some greens directly from the garden and enjoy crisp berries intensified with a hint of vinegar, soothed with creamy goat cheese.

What you’ll need:

Tools:

  • Salad Bowl
  • Cutting board and knife
  • Jar for dressing
  • Measuring spoons

Ingredients:

Salad:

  • 5+ cups mixed greens of your choice (spinach, arugula, pea shoots, lettuce, baby kale, etc.)
  • ½ cup chopped pecans
  • ½ cup sliced strawberries
  • ½ cup blueberries
  • ¼ cup sliced pickled red onion
  • 4 oz goat cheese, chunked

Dressing:

  • ⅓ cup sugar
  • ½ cup red wine vinegar
  • 1 tsp salt
  • 1 tsp dry ground mustard
  • 1 cup vegetable oil
  • 1 tbsp poppy seeds

1. Toss the salad ingredients together with the exception of the cheese. 

2. Combine the salad dressing ingredients in a jar. Seal and shake vigorously until combined.

3. Top salad with chunked goat cheese and add dressing to taste.

4. Serve and enjoy immediately.
