What you’ll need:
Ingredients per cocktail:
- 2 oz Gin
- 1 oz Lemon juice, fresh squeezed
- ¾ oz Honey thyme simple syrup
- ½ cup honey
- ½ cup water
- 3 sprigs of thyme
- 1 Egg white
- 1 oz Club soda
- Thyme sprig for garnish
Tools:
- Small sauce pot
- Cocktail shaker with strainer
- Ice for shaking
- Chilled glass
1. First, make your simple syrup so it has time to cool before using it in your cocktail. Combine the equal parts of honey and water in a small stockpot. Toss in several thyme sprigs and heat to a simmer until the honey has dissolved into the water and the mixture is aromatic from the thyme. Remove from heat and cool. Remove thyme sprig and discard. This can be stored in a sealed jar in the refrigerator for up to a week.
2. Without ice, combine gin, lemon juice, cooled simple syrup, and egg white into a shaker and shake for about 10 seconds. Add ice and shake again.
3. Strain into a chilled glass. Top with club soda and a sprig of thyme for garnish. Enjoy!
