For all those days when it’s too hot to turn on the oven or stove, here are some ideas for how to use up your greens.
Arugula, watermelon, basil and feta salad
What you'll need:
2 cups arugula
1 cup cubed watermelon
1/3 cup crumbled feta
1 handful basil
salt and pepper to taste
olive oil to taste
How to:
Mix salad ingredients and drizzle with olive oil and add salt and pepper to taste.
Kitchen sink salad
What you'll need:
3 cloves of diced garlic
2 shallots
4 lemons
1/3 Olive oil
3 tablespoons of dijon mustard
1 pound chicken breasts
3 tablespoons Balsamic Vinegar
½ cup Olive oil
2 garlic cloves
salt and pepper
2 cups spinach
1 cup arugula
handful zucchini blossoms
half pint strawberries
½ cup crumbled goat cheese
½ cup pecans
How to:
Dice three garlic cloves and two shallots and place in medium bowl. Add the rest of marinade ingredients to bowl. Place chicken breasts in bowl with marinade and let sit covered for a minimum of one hour and up to three hours.
Heat oven to 425 degrees, and cook for 25 minutes. While the chicken is cooking, mix the salad dressing ingredients in a small bowl and add the remaining two garlic cloves.
Wash the greens and strawberries. Combine greens and remaining ingredients in large bowl. Once the chicken has cooled, slice it and add to the salad.
Toss with salad dressing when ready to eat.
Kale, beet and almond salad
What you'll need:
Chopped Kale
Shredded Beet
Shredded carrots
Silvered almonds
Garlic
Maple Syrup
Lemon Juice
Balsamic Vinegar
Olive Oil
Salt and Pepper
How to:
Dice garlic and place in a small bowl. Add the rest of salad dressing ingredients and whisk to combine.
In another large bowl, add chopped kale and pour dressing over kale. Massage kale with your hands until the dressing is evenly distributed.
Add beets, carrots, and almonds and mix.
Asian mango salad with cilantro-lime dressing
What you'll need:
Arugula
1 chopped mango
½ cup cashew nuts
½ cup sesame sticks
3 green onions, sliced
1 handful diced cilantro
⅓ cup lime juice
½ cup olive oil
2 diced cloves of garlic
How to:
Whisk salad dressing ingredients in small bowl. Combine salad ingredients and pour dressing on top.
