By growing tomatoes and basil, this dream becomes an achievable reality. Glacier tomatoes are a flavorful and sweet variety that only take 55 days to produce fruit. Plant basil next to tomatoes (in the same container) to make the tomatoes taste even better because they're "companion plants". Harvest these ingredients from your back porch, it doesn't get any more local than this.

Here is how to assemble your homegrown caprese creation for a delicious summer dinner.

 

INGREDIENTS:

 

  • 4-6 glacier tomatoes 
  • Ball of mozzarella 
  • Handful of basil leaves 
  • Balsamic reduction 
  • Olive oil 
  • S & P

 

STEPS:

 

  1. Slice tomatoes and mozzarella into slices and pick off any basil leaves from their stems. 
  2. Arrange in a pattern on a serving plate, alternating one tomato slice, one basil leaf, and one slice of mozzarella, working from the outer edge of the plate and spiraling into the center. 
  3. Drizzle balsamic and olive oil on top, and sprinkle salt & pepper to taste. 
  4. Serve immediately, share if you must!
